Unfiltered Extra Virgin Olive Oil from La Castellina
Origin Castellina in Chianti, Italy
Sexy, fruity, Tuscan. The olives are grown on 10 hectares of the farm La Castellina, harvested manually, stored in boxes and brought to the mill within 24 hours of the harvest. The oil is obtained by cold extraction (28°C), with a final acidity from 0.3 to 0.5%. Filtration is not carried out to maintain its special fragrance. After 10 days in special stainless tanks to ensure a perfect deposition, it is bottled daily in small quantities to preserve its unique flavor and character.
Inspiration In salads, and with Dario’s Profumo del Chianti for dipping. This is a “finishing” rather than frying oil. Stored in the refrigerator, it will retain its subtle characteristics for two years.
